Compote of grapes for the winter
You can roll up grape compote at home using this recipe from any variety, and it will taste like grape juice. Ingredients are indicated for one 3-liter jar.
Ingredients:
- grapes - to cover half the container;
- water – 2.5 l;
- sugar – 1 tbsp;
- lemon acid.
Compote preparation technology:
- Wash the grapes, pick off the bunches, as well as spoiled and overripe grapes. Allow excess water to drain. Pour into the jar up to half its volume.
- Boil syrup from sugar.
- Pour hot syrup into the jar of grapes and leave to steep for 15 minutes.
- After the specified time has passed, pour the syrup into a saucepan and boil for 2 minutes, adding citric acid at the end.
- Fill the jar with syrup, close it with a key, place it upside down, cover with a blanket and let cool.
Grape compote without sterilization
For grape compote without sterilization, you can use grapes of both blue and white varieties. To make the compote rich, you will need a little more sugar and the grapes themselves. You can add spices (cloves, mint or cinnamon) to the compote during rolling.
Compote, rolled up for the winter without sterilization, is stored for no more than one year.
Ingredients:
- grapes – 2 kg;
- sugar – 0.5 kg;
- water - 4 l.
Cooking technology:
- Wash the grapes, or better yet, leave them in water for 15 minutes. Pick off the berries and rinse again.
- Pre-sterilize the jars.
- Fill the jars about a third full with berries. Sprinkle them with sugar on top.
- Pour boiling water over the grapes in the jars and immediately roll them up, turn them over and wrap them.
- Leave the jars with compote for a day for self-sterilization.
How to cook
- Preparation
: wash and sterilize jars and lids (iron or). Wash the grapes in cool water. Dry. Boil water at the rate of approximately 2-2.5 liters per three-liter jar (+ a little extra). - First filling (blanching)
: pick the grapes from the branches and fill the jars halfway with berries. Pour boiling water over the jars and cover them with lids (do not roll them up, just cover them so that dust does not fly). Let it sit for about 1 hour (so that the jar cools down and no longer burns your hands). Then put a lid with holes on the jar and drain the water (drain into a liter jar to measure the number of liters received. And then pour the water into a large saucepan). - Filling with syrup
: add sugar to the water drained from the berries (at the rate of 300 g for each liter of water). Bring to a boil and cook the syrup for another 5 minutes. Pour boiling syrup over grapes in jars. Close with lids. Turn the jars upside down and leave to cool in this position until the morning. - Storage
: Return the jars to their normal position and store at room temperature in a dry and dark place. - Application
: after opening the jar, dilute the compote with boiled water by 1/2 (you can add more water, try it, it all depends on how sweet you like it).

Ingredients for making grape compote:
- grapes (dark) – 500 grams,
- granulated sugar – 250 grams,
- water – 2.3 – 2.5 liters.
Compote of grapes using double pouring method
You can quickly roll up compote for the winter without sterilization using double pouring - a method used when canning tomatoes. This recipe for grape compote for the winter is also different in that you do not need to prepare sugar syrup. It is poured into the jar, not immediately, but after the first pouring of boiling water.
Ingredients (based on a 3-liter bottle):
- grapes – 700-800 g;
- sugar – 1 tbsp;
- water – 2 l.
Cooking technology:
- Bring the water to a boil while the grapes prepare.
- Wash the grapes well, pick the bunches and pour them into a jar a third of the way up. If desired, or if too sweet varieties are used for compote, you can add a couple of lemon slices.
- Pour boiling water into the jar of berries, cover with a lid and leave for 10 minutes.
- Drain the water and put it on the fire until it boils again.
- Pour sugar into a jar on top of the grapes.
- Place the jar in a bowl and pour boiling water over it a second time, allowing a little water to overflow the edge (for this you will need a bowl).
- Roll up and leave to cool under a blanket for a day.
Grape compote: benefits and harms
The maximum benefit can be obtained from fresh berries, but in their absence, in winter, grape compote will do a good job of replenishing the supply of vitamins C, PP, P, B1, B6, B12. It contains a high content of glucose, as well as microelements such as calcium, magnesium, manganese, and cobalt.
Grape compote is a strong antioxidant that inhibits the aging process and removes free radicals and toxic substances from the body. It has a positive effect on brain function, tidies up the nervous system, and relieves fatigue. - water – 2 l;
- 1 tbsp. Sahara;
- grapes - enough to fill the jars by a third.
Cooking technology:
- Wash the grape bunches, pick off green and damaged berries. Place in jars one third of their height.
- Make syrup and pour it hot into containers with grapes.
- Roll up the jars, turn them over, wrap them and leave them for a day.
Grape compote without sugar
To prepare grape compote for the winter according to this recipe, you will need a little extra time, since sugar-free compote requires additional sterilization. But it contains even more useful vitamins and is suitable for use by people suffering from chronic diseases for which sugar should not be consumed.
Ingredients:
- grapes in bunches - enough to fill the jar to the brim;
- water for filling - in the amount required for the remaining volume of the jar.
Cooking technology:
- Carefully sort the bunches of grapes and remove any debris. Carefully place grapes up to the shoulders in sterilized jars.
- Little by little, so as not to crack the container, fill the jar with boiling water.
- Sterilize the jar of compote for 10 minutes in a pan with water or fry in the oven.
- Roll up and leave to cool.
Grape nectar “Kishmish”
Another option for preparing a delicious vitamin cocktail is to use Kishmish grapes as the main ingredient. The berries do not contain seeds. In addition, grape compote for the winter is made without sterilization and with a minimum of ingredients.

The preparation procedure is as follows:
- Prepare a sterile container.
- Pack the washed and sorted fruits into clean bottles.
Kishmish grape compote
A light and pleasant-tasting compote is made from white grapes, for example, from the Kishmish variety. You can use both small and large sultanas - there is no fundamental difference, because the main thing is taste.
Ingredients:
- white grapes – 1 kg;
- sugar – 300 g;
- water – 0.7 l.
Cooking technology:
- Boil the syrup: boil for 4 minutes and leave to cool.
- Wash the grapes. It is better to pick the berries, but if desired, they can be placed together with the bunches.
- Pour boiling water over the jar. Pour berries to the very top of the jar and pour warm syrup.
- Place jars of compote for sterilization. To do this, put several layers of gauze on the bottom of a tall saucepan, pour in water and heat it. When the water is hot, place the jars of compote in the pan so that the water covers more than half of the jar. Let the water in the pan boil, turn down the heat and sterilize the compote for 20 minutes.
- Roll up the compote, turn the jars over, wrap them and let cool.
Grape compote “Isabella” with spices
Even a novice housewife can prepare a healthy compote of Isabella grapes for the winter. It is good to use in cold winter times to prevent infectious diseases.
Ingredients (for 1 three-liter bottle):
- Isabella grapes – 1 large bunch;
- sugar – 0.5 tbsp;
- water - about 2 liters (depending on the size of the grape bunch) to fill the jar to the brim;
- mint and lemon balm - 1 sprig each;
- lemon or lime - 1 slice.
Cooking technology:
- Wash the grape bunch well, trim the top stalk that is too long and select damaged and dry berries. Let the water drain and then place in a pre-sterilized jar. Add mint, lemon balm and lemon.
- Boil syrup from sugar and immediately pour it over the grapes.
- Roll up the compote, turn it over, cover with a blanket and leave to cool.
Compote of green grapes with honey
Compote made from green grapes for the winter with the addition of honey instead of sugar has a very unusual taste. Green grape varieties are not often used for canning because they give the compote a very weak color.
To give the compote a beautiful color, you can add red apples.
If color is not as important as taste, this recipe is worth trying. So, how to make compote from grapes with honey?
Ingredients:
- green grapes – 3.5 kg;
- honey – 1 kg;
- water – 3 l;
- grape vinegar - 50 ml;
- ground cinnamon – 1 tsp;
- cloves – 5 pieces;
- lemon – 1 pc.
Cooking technology:
- Wash the grapes and let dry. Place in jars to one third of their height.
- Prepare syrup (honey, water, cloves, cinnamon, lemon juice and vinegar).
- Pour hot honey syrup into jars of grapes and leave for 30 minutes.
- Strain the syrup back into the pan, boil it for 2 minutes and pour it back into the jars.
- Roll up the compote, wrap the jars and leave to cool.

For adherents of proper nutrition and those who monitor their health, a recipe for a sugar-free grape drink will be a real find. It will perfectly invigorate and quench your thirst.
Ingredients:
- Bunches of grapes – 1 kg
- Water – 1 l
Grape compote
Cooking plan:
- Wash the grapes with brushes, sort out any debris and spoiled berries. Separate suitable fruits from the branches and add water, then dry the grapes on paper towels.
Attention! For large berries, it is better to carefully remove the seeds with a toothpick or needle. In this case, the prepared grapes must be immediately put into jars and canned, otherwise they will spoil.
- Prepare sterilized jars.
- Place the berries tightly in jars up to the neck. Do not press down the fruits so as not to damage their integrity.
- To boil water. Pour boiling water into bottles with berries.
Attention! To improve color and slight sourness, add lemon or lemon juice to the preparations.
- Sterilize the workpiece for 30 minutes. To do this, you will need to prepare a wide pan, the bottom of which is covered with a towel. Place bottles of grapes at the bottom. Pour hot water into the pan at the temperature of the workpiece itself. You can sterilize the seaming in the oven at high temperature.
- The last step is to roll up the jars and cool.
Store the already cooled preserves in a cellar or pantry.
