- Antonovka apples – 2-3 kg
- rye flour - 100 gr.
- water - 2.5 l
- salt - 1 tsp.
- sugar -100 gr.
- fresh currant leaves
Instructions on how to make soaked apples for the winter at home
- We take a jar with a wide neck and large volume. In our case, we use a 4.5 liter jar. Wash and wipe dry. Cover the bottom of the jar tightly with currant leaves.
- Then lay out the fruits in one layer. They should fit fairly tightly to each other so that there is no need to use additional pressure, and the fruits themselves are well marinated under their own weight.
- Then we lay another layer of leaves on top. Alternate layers until the jar is completely filled. The last layer should be a layer of currant leaves.
- Then we prepare the “marinade”. To do this, pour salt and sugar into water at room temperature. Stir and begin adding rye flour in small portions.
On a note! To prevent the flour from forming lumps, add it gradually in small portions and be sure to break it up with an egg whisk or blender.
- When the mixture becomes homogeneous and there are no visible lumps of flour, pour the “marinade” into the jar.
- The liquid should completely cover the apples. Cover the top of the jar with gauze folded in several layers. We leave the apples in a cool place for a month. From time to time we will check the liquid level in the jar and, if necessary, update it with the remaining flour brine, which must be stored in the refrigerator. You should also remove foam from the surface.

Pour the resulting mixture over the apples and stir. Simmer over medium heat for 6 hours or until apples are soft, stirring occasionally. Using an immersion blender, puree the apple mixture and continue simmering for another 1-2 hours. During this time, the apple butter should boil down and acquire a rich dark amber color. Place the finished oil in jars, sterilize and roll up.
