Recommendations for the selection and preparation of raw materials

The healing properties of viburnum have been known since ancient times. The wild forest berry, widespread in the northern hemisphere, has long been cultivated in horticulture. Based on Viburnum vulgaris, new varieties have been obtained, distinguished by larger berries and less bitterness. In addition to the usual red color, viburnum fruits can be black, dark blue or blue, less often yellow-orange.

This is a unique plant whose berries contain twice as much vitamin C as lemons and kiwis. Viburnum is a record holder for iron content. The fruits contain vitamins B, A, E, K, P, calcium, potassium, magnesium, phosphorus and other essential microelements, as well as tannins, phytoncides, pectins and organic acids. The berries are used as a cure for many diseases, but it also has a number of contraindications. They should be eaten with caution so as not to cause harm to the body.

Fruits of any variety are suitable for winter harvesting: both cultivated and wild. The taste of fruits improves after the first autumn frosts

It is recommended to collect viburnum after the first frost.

For processing, it is recommended to select whole, undamaged fruits. To reduce bitterness, they can be pre-frozen in the freezer. Before cooking, the berries are separated from the branches, sorted, removing damaged ones, and washed thoroughly. It is also recommended to blanch them in boiling water for 2-3 minutes, and then immediately pour cold water over them - this will remove the bitterness and make the skin softer.

Ready-made desserts have a unique taste that can be adjusted by the amount of sugar.

Viburnum, ground with sugar for the winter without cooking

This recipe is very simple and does not require a lot of time or money. It is enough to collect the berries, prepare sugar and storage containers. Grated viburnum with sugar is prepared one to one. For those who like it sweeter, you can add more. It all depends on your preferences.

Ingredients:

  • Viburnum berries – 1 kg
  • Sugar – 1 kg

Cooking method:

1. First, you need to collect the viburnum. The best time to pick the bunches is when the first frosts begin. At this time, the berries become as healthy as possible and less bitter. Then we separate the fruits from the branches, put them in a separate container and wash them thoroughly several times.

2. Now that the viburnum has been thoroughly washed, it needs to be dried well. Place the berries on gauze folded in 3 layers and gently blot them. Then we leave the fruits open for some time until they dry completely.

It is necessary to dry the berries! This is done so that the workpiece is stored better, and excess moisture will prevent this.

3. Then place the berries in a container and continue cooking. Cover viburnum with sugar. We will need 1 kg of it. Using a masher, we begin to mash the fruits with granulated sugar. We add it gradually so that everything is distributed evenly.

4. When all the sugar has already been added, you will see that the viburnum has released juice. The preparation doesn't end there. Next, take a spoon (preferably a wooden one) and start grinding the fruits with it. This must be done until the sugar is completely dissolved and the mass becomes more or less homogeneous.

5. After the sugar has dissolved and the berries have released their juice well, we begin to put our “health elixir” into jars. Jars must be sterilized and thoroughly wiped dry. The container can be processed by boiling, steam or in the microwave.

6. Close the jars with boiled lids, screwing them tightly. You can also use regular nylon ones.

The result was 1.5 liters of beautiful, delicious viburnum.;) This preparation should be stored in a cool place - this could be either a refrigerator or a cellar. Eat delicious berries and be healthy. Bon appetit!

After the mass has frozen well (usually this takes 4-5 hours, just to be safe), we turn the mold over onto a cutting board and tap it well, all the cubes fall out.

Then we place the mass in a tight bag, trying to release the air, or in a zip-lock bag, and place it in the freezer.

Preparation:

1. It is better to pick berries from a branch together with tassels. This way you will avoid injuring them. Already at home, you can safely and slowly remove them from the stalks. We immediately inspect and select and remove all damaged specimens.

2. Place the selected ripe berries in a bowl and rinse under running water. Then pour boiling water over them. In this form, leave them to warm up for 5-10 minutes. This procedure is important, so don't skip it. Boiling water will kill all microbes and possible living creatures in the fruits.

It will also partially relieve the berries of bitterness and unpleasant aftertaste.

3. Transfer the scalded berries to a sieve and let stand for 10-15 minutes to drain off excess water. You can blot them with paper towels to collect any remaining residue.

4. Then place the bowl down. Rub the berries with a wooden spoon or masher until only one pulp remains in the sieve. We, in turn, transfer it to cheesecloth and squeeze out the remainder to get the most out of the product. And use a glass to measure how much puree you get.

If we get 3 cups, then we will need 6 cups of sugar, if 4 cups, then we will need 8 of the same measures of sand. That is, the proportion will be 1 to 2.

5. Add the required amount of sweetness and stir everything well. Leave it like this for a couple of days, covering it with a lid.

In this case, the mixture must be stirred frequently so that all the sand dissolves. For the first 24 hours, you can keep it on the kitchen counter; during the second 24 hours, it is better to put the bowl in the refrigerator. But don’t forget to take the contents out and mix.

6. During this time, the mixture will thicken and become jelly-like. Pour the finished product into jars.

They must be sterilized before bottling. You can do this in any usual way. Boil the lids (possibly nylon) separately or pour boiling water over them. There is no need to seal them hermetically - just screw them on as usual.

We store the treat in the refrigerator. Take no more than 4 tablespoons of aromatic jelly per day, I already told you about this today.

Therefore, jam that has undergone heat treatment can be stored in the pantry, where the air temperature does not rise above +20 °C. But it is better to leave the raw product in the refrigerator.

You should not keep jam in the basement or on the balcony - due to sudden temperature changes, it can quickly lose its beneficial properties. The optimal shelf life for raw berry mass is 3-6 months, and for boiled berry mass – from 2 to 3 years.
