Simmer until done over low heat. This is approximately 30-40 minutes. At the end, add citric acid, mix and keep on fire for a few more minutes, then put into sterilized jars and roll up.

If the caviar is intended for current consumption, you can simply cover it with plastic lids and keep it in the refrigerator.
