In what month are rose hips harvested? When are rose hips harvested and how to determine harvesting time?

Time to collect fruits in the middle zone, Moscow region and other regions of Russia

The largest amount of useful substances is concentrated in fruits. In terms of vitamin C content, rose hips have no competitors - even in lemon and black currant this figure is much lower.

Rose hips are harvested during their full ripening, when the plant has accumulated the maximum amount of vitamins . The berry-like rose hips ripen at different times depending on the type and variety of plant, geographic region of growth and weather conditions.

Rosehip bush with fruits

In central Russia, the Moscow region and Ukraine, the collection period is at the end of August and lasts until October . Ripe berries are easy to identify - they are bright orange or red in color and firm to the touch. When the fruits ripen, they do not fall off the bushes and remain on the branches in winter, but it is better not to delay harvesting until frost.

To prepare healing raw materials for the winter, choose a sunny, dry day. Usually hard fruits with stalks and sepals are removed , which are easily removed after drying. You should not collect damaged berries that show signs of rot and blackness.

Rose hips can be collected only in areas remote from industrial sources of environmental pollution: factories, factories, roads, landfills.

How to collect rose hips: tips and rules

It is important not only to know when to collect rose hips, but also how to do it. It is worth keeping in mind the following recommendations for collecting rose hips:

  • It is recommended to collect rose hips when it is a dry, sunny day outside.
  • You cannot collect fruits or any other parts of the plant near roads and railways, farms, any enterprises, chemical warehouses, landfills.
  • For picking, you should choose firm berries, and they should be removed along with the sepals and stalks (they can be easily removed after drying).
  • You should not collect fruits with any damage, cracks, blackness or rot.
  • When picking rose hips, you must have thick gloves on your hands to avoid getting pricked or scratched on the thorns.

Drying methods at home

Before you start drying, you need to carefully review the harvest again and remove limp or spoiled fruits, as well as leaves and other debris that got into the basket during harvesting. Rose hips are not washed before drying - the dust is removed from them immediately before brewing. Drying is carried out in two ways:

Natural drying or cold method

The simplest method, which requires a well-ventilated dark room without access to sunlight - this could be an attic or a barn. The collected fruits are scattered in a thin layer on any horizontal surface, placing cardboard, plywood, clean burlap, a mesh tray and other available means.

Drying rose hips naturally

The berries are stirred from time to time so that they do not cake or become moldy. Drying is continued until the rose hips become dry and hard. Natural drying is preferable - this method preserves the maximum amount of nutrients in the berries.

Heat treatment or hot method

The use of heat treatment at home is more suitable for urban residents who do not have the opportunity to dry rose hips naturally. The fruits are placed on a baking sheet in one layer and placed in the oven, setting the temperature to 40-60°C . The berries take a long time to dry – several hours. There should be an outflow of moisture evaporating from the berries from the oven, so keep the oven slightly open. If your oven has a convection function, you need to turn it on when drying rose hips. The berries are stirred periodically to prevent them from burning.

Drying rose hips in the oven

It is recommended that medicinal raw materials dried using the “hot” method should not be stored immediately , but kept open for a couple of days at room temperature.

During heat treatment, it is not recommended to overdry rose hips - such berries become fragile and crumble in your hands. Well-dried berries acquire a rich orange, red or burgundy color, and the skin springs back when pressed on it.

How to process rose hips?

The collected plant material is subject to sorting and preparation for drying. Drying rose hips is the most important step in harvesting plants. Undried parts of wild roses lose their beneficial qualities. Recommendations for the preparation and processing of harvested fresh raw materials:

  1. Inspect the collected fruits and leaves.
  2. Remove low-quality, damaged copies.
  3. Rinse the berries and roots with clean water.
  4. To dry, spread in a thin layer on cardboard or sheets of clean paper, in a layer of 1-2 cm.
  5. Before drying, keep the fruits in the sun for 1-3 hours.
  6. To preserve beneficial qualities, dry the leaves and seeds outdoors in the shade.
  7. Only the roots can be dried in the sun.
  8. In rainy weather, use artificial drying at a temperature of 40-50ºС.
  9. Drying time is 4-7 days.
  10. Carefully turn the plants over while drying.

How to store dried berries

The finished rose hips are rubbed in your hands so that the dry stalks and sepals fall off. Then they are laid out in glass or tin containers , tied with cotton cloth or double-layer gauze so that the berries “breathe” and do not become moldy.

For storage, cardboard boxes are also used, which are pre-lined with waxed paper. It is convenient to store rose hips in fabric or paper bags - they allow enough air to pass through to protect the berries from spoilage.

Dried rose hips in a basket

Containers and bags with berries are placed in a dark place without access to sunlight, which is detrimental to the vitamins and nutrients contained in the berries. During storage, it is necessary to exclude the proximity of dry fruits to fresh vegetables and fruits , odorous substances and heating devices.

Dried rose hips can be stored for up to two years without reducing their healing qualities.

How to brew rosehip correctly

In cooking, a lot of dishes and drinks are prepared with the addition of rose hips : jelly, compote, fruit drink, preserves, jam, jelly, marmalade. Each of them has healing properties, helping the body replenish its supply of vitamins and microelements and strengthen the immune system.

Rosehip jam

Syrups, infusions, decoctions, extracts and even alcohol and vodka tinctures are prepared from rose hips. The healing spectrum of the miracle plant is not limited to colds, it is recommended to take it for :

  • anemia and general exhaustion;
  • diseases of female organs;
  • problems with the digestive organs, intestines, liver;
  • urological diseases;
  • atherosclerosis;
  • neurasthenia;
  • bleeding and slowly healing wounds;
  • poorly healing fractures;
  • arthritis;
  • bronchial asthma and pulmonary tuberculosis.

Before preparing medicinal drinks, the dried berries are washed, dried and crushed in any convenient way - cut with a knife, passed through a meat grinder, crushed with a pestle. You can brew whole berries, but it is believed that this way less nutrients will get into the drink or dish.

For any method of brewing rose hips, the optimal proportion is considered to be one in which 1 liter of water is used per 100 g (4 tbsp. L) of fruit.

In a water bath

A drink prepared in a water bath is used to strengthen the immune system. To cook rose hips, place 2 tbsp in a small saucepan or ladle. l chopped berries and pour 2 glasses of hot water (70-80°C) . The ladle is placed in a water bath - a larger diameter pan with slightly boiling water. The drink is kept in a water bath for 15-20 minutes, then removed, cooled and infused for 24 hours.

Rose hip decoction

Rose hip decoction
The fastest way to get a pleasant drink with a sour taste is to make a decoction of rose hips. To do this, take a handful of berries, pour 1-1.5 liters of boiling water and cook over low heat for 10-15 minutes. Boiling extracts the maximum amount of coloring and flavor components from the berries, resulting in a rich “tea.” However, there is no need to talk about the benefits of such a drink, because prolonged exposure to high temperatures destroys the vitamins and nutrients that make up the berries.

In a thermos

The most effective way to brew rosehip is infusion in a thermos . At the same time, all vitamins are preserved, and the color and taste of the drink is as rich as possible.

Rosehip infusion in a thermos

To brew rose hips in a thermos, just take 3-4 tbsp. l chopped berries, pour into a thermos and pour 1 liter of boiling water . Close the thermos and leave for several hours. It is most convenient to brew the berries overnight, then in the morning you will have a tasty and healthy drink on the table.

Regardless of the method of preparing rosehip, before using it, you must strain it through a strainer or 2-3 layers of gauze - this will separate all the small particles and hairs that can irritate the throat and stomach.

Alcohol tincture

It is useful to take an alcoholic tincture of rose hips to prevent atherosclerosis and strengthen the immune system. To prepare, a glass of dry berries is washed and lightly steamed. The prepared fruits are placed in a liter jar or bottle with a wide neck, 150-200 g of sugar are added and 0.5 liters of vodka are poured in . Cover the container with a lid and leave for 25-30 days in a dark place, shaking it occasionally.

The finished “medicine” is filtered and taken 15-25 drops per day on a piece of refined sugar or diluted with 1/3 glass of water or tea. To soften the taste, additional ingredients are added to the classic tincture recipe: apples, citrus fruits, mint, bay leaves, rowan berries, cranberries and even ground coffee.

The use of rosehip alcohol tincture is contraindicated for children, pregnant and lactating women, persons with alcohol intolerance and liver diseases.

Recipes with dried rose hips

The first thing to do with dried rose hips is to wash them. Then the fruits can be twisted in a meat grinder, cut with a knife or crushed on a plate with the bottom of a glass or cup if a small portion of raw materials is required. If you brew the rosehip whole, it will give less vitamins to the drink. As a rule, crushed fruits are poured with boiling water, boiled in a water bath for five to thirty minutes and infused in a thermos for about half an hour. You can not boil it, but pour boiling water over it and leave it in a thermos overnight. Usually, sugar, honey or herbs - mint, lemon balm or stevia - are added to rose hips to improve the taste before use. Before use, it is worth straining the infusion through cheesecloth so that the hairs do not irritate the digestive system.

Rosehip infusion can be drunk before meals 2-3 times a day for a month. In addition, it can be poured into ice cube trays and frozen: such cubes are an excellent cosmetic product that tones the skin.

Rose hip drink

Wash dried rosehips (1 tablespoon), crush them, pour boiling water (200 ml) and boil for 8-10 minutes. Place the broth in a warm place and then strain. You can add sugar or honey.

Rose hip jelly

Chop dried rose hips (100 g), add water (2 liters), boil over low heat for 15 minutes, then strain. Add sugar (200 g), lemon pieces or citric acid (0.5 g) to the broth, add starch (50 g) diluted in cold water, bring to a boil.

Vitamin tea made from rosehip, rowan and oregano

Add rose hips (20 g) and rowan (10 g) with water and cook for 5 minutes, add oregano herb (5 g), leave for 10 minutes.

Rose hip tea

Boil dried rose hips (100 g) in a liter of water for 5 minutes. Leave for 40-60 minutes, strain, add lemon juice and sugar to taste. Rose hips can be used not only dried, but also fresh.

How to drink rosehip correctly

To decide how to take a rosehip drink correctly, you need to know for what purposes it is recommended, because the dose and duration of drinking depends on this :

  • for a tonic effect - every morning 20 minutes before meals;
  • as a choleretic agent - three times a day, 1/3 cup 30 minutes before meals;
  • for colds and flu - warm in the evening 10 minutes before bedtime.

Decoctions and infusions of rose hips are allowed to be drunk by pregnant women and nursing mothers , as well as children suffering from frequent colds. The volume of the drink can be 1.5 liters per day .

Courses of treatment last from 2-3 weeks to 2 months . If necessary, after a short break, rosehip intake is resumed.

If you have serious chronic diseases, it is advisable to consult a doctor about the need and safety of rosehip treatment.

Be careful with rose hips if you have hypertension, serious heart problems, cholelithiasis, thrombophlebitis

It is recommended to sweeten the decoction or infusion with honey , but you should avoid sugar during treatment. Viburnum, black currants, raspberries and various medicinal herbs are often added to rose hips, which enhances the healing effect of the miracle berry.

There are many ways to prepare rose hips for the winter. We’ve dealt with drying, so I suggest you move on to another interesting cooking option. We will prepare delicious rosehip jam. Why not, it’s a great idea to save the berries until spring.

We will need:

  • Rosehip - 1.0-1.2 kg.
  • Granulated sugar - 14 tablespoons
  • Water

Preparation:

1. Let's first start preparing the fruits. Be sure to wash the collected berries. Remove the sepals and cut crosswise, then clean out the seeds.

2. Place the peeled fruits and seeds on a sieve and rinse under running water.

3. Then put the rose hips into a saucepan and fill with water. The volume of water should be equal to the volume of berries.

Cook the mixture over medium heat for 20 minutes. After a while, take out the rosehip and put it aside. Add sugar to the resulting syrup. While stirring, continue to boil it for 10 minutes.

After time has passed, add rose hips again. Bring the jam to a boil, skim off the foam and simmer for 5 minutes.

In the meantime, you can sterilize the jars. We will carry out this process in the oven. We do the same with lids.

Sterilization time is 15-20 minutes, at 150 degrees.

Now that the rosehip jam is ready, it’s time to put it into jars. Preferably hot. Then screw the sterile cap on tightly. Leave the jar of jam on the table until it cools completely.

It is preferable to store this vitamin preparation in a cool place. This dessert will not only go with any tea party, but will also charge you with energy for the whole day. And most importantly, it will save you from colds. By the way, it makes excellent fruit drinks.

Rosehip harvesting recipes

There are many options for harvesting this type of fruit. We are talking about freezing and drying, as well as preservation. Jam and compote are made from raw berries, and an alcoholic tincture or syrup is made. Rose hips can be the only ingredient, that is, the main one, or be just one of the components. Adding it to a compote or decoction certainly increases the usefulness of the dish.

Drying rose hips

The simplest and most accessible method of harvesting rose hips is drying. Conventionally, it is divided into 2 methods - this is the natural or cold method, as well as thermal drying.

The sorted berries should be placed on trays or pallets, previously lined with cloth or paper that allows them to absorb excess moisture. The rose hips are poured in one layer. From time to time, about once every 2-3 days, it needs to be stirred. Dry the fruits at room temperature in a dry, well-ventilated area. Do not allow them to stay in direct sunlight for a long time. For example, it is good to dry rose hips in the attic.

Drying rose hips in the sun is also acceptable.
Then they partially retain their taste and aroma properties, but there are almost no useful substances left in such raw materials. If possible, it is better to abandon this method. The degree of readiness of the product can be judged by its appearance.
If the rosehip shell cracks when you press the berry with your fingers, then it is ready. You can dry rose hips at high temperatures. This technology is called thermal. An oven or an ordinary household oven is suitable for this. You need to arrange the sorted but not washed berries on a sheet in 1 layer. They are dried at a temperature of 55 degrees for about 8 hours. You should stir the fruits from time to time so that they do not burn. It is advisable to leave the oven door ajar - this will increase air exchange.

It is best to thermally dry rose hips in a special electric dryer.
Preparation for drying, in this case, is similar to all the methods described above. As soon as the berries are loaded into the device, you need to set the dryer to a temperature of 70 degrees. In 6 hours they will be ready. If this does not happen, you can increase the temperature slightly and keep them in the dryer for another 1 hour. The finished rose hips crumble, the top layer may fall off, but the berries do not break or crumble when squeezed with your fingers. This indicates overdrying .
Dried fruits should be stored in a container that does not allow moisture to enter. For example, in a plastic container or jar that is kept in a cool, dry place. Dried raw materials retain their beneficial properties for up to 2 years.

Rosehip leaves are collected at the time of flowering of the bush, and the roots are collected at the end of autumn, when the plant has shed its leaves. These plant components are dried in a dry, cool place, excluding direct sunlight.

Freezing

One of the simplest, fastest and most successful ways to preserve rosehip is to freeze it. Thanks to this, the berries retain the entire complex of nutrients and vitamins.

The fruits need to be sorted, then washed and dried, spread in 1 layer on a cloth towel. When they are dry, they need to be laid on a wooden board in 1 layer, placed in the freezer for 2-3 hours. Then the frozen raw materials are removed, transferred to a plastic bag or plastic food container and placed back in the freezer. The ideal freezing temperature is considered to be from -16 to -18 degrees.

You can also freeze fruit halves. Then, after washing and drying, the rosehip is cut in half, the seeds are removed from it, and then freezing occurs in the same way as in the case of whole berries.

Alternatively, you can grind the rosehip in a blender, put the mixture in ice trays and place it in the freezer for a couple of hours. Then they are transferred to a container where they will be stored and returned to the freezer.

Rosehip jam

Those who like to combine business with pleasure will certainly want to make tasty, aromatic and healthy jam from rose hips. Moreover, there are many recipes, and everyone can choose an option to their liking.

The classic, simplest recipe for rosehip jam.

Washed, sorted and cleared of debris and leaves, the fruits are taken in a 2:1 ratio with sugar.
That is, for 2 cups of rose hips you need 1 cup of sugar. It is useful to remember that after washing, sorting and peeling the fruits, there will be almost half as much left as was collected.
The berries, washed several times in cold water, should be poured into a saucepan or bowl, pour boiling water over them, and then left to cook. After 5 minutes, they are removed from the heat and washed with cold water. This manipulation is necessary to soften the berry raw materials.

Then the rose hips are covered with sugar and a little water is added to it. For 2 cups of fruit you will need approximately 1/5 cup of liquid. Everything is put on a small fire. After boiling, the jam is stirred and left to simmer for 5 minutes. After this time, the foam must be removed and the mixture removed from the stove. With an interval of 7-8 hours, boiling is repeated 3 times. Next, the jam is poured into sterilized jars, closed with lids and stored in a dark, cool place.

Alternatively, you can prepare a sweet treat in just 1 cooking.
Then its duration will not be 5 minutes, but not less than 40 minutes. It’s easy to check the degree of readiness: you need to drop jam syrup onto a saucer.
If it does not spread, then the treat is ready. How to make rosehip jam, video:

Rosehip compote

Compote is a delicious vitamin drink. It is brewed from fresh or dried, as well as from frozen rose hips. Moreover, the berries can be mixed with other ingredients, or a drink can be prepared exclusively from rose hips.

For a classic drink, take 10 medium-sized berries per half liter of water. The fruits are washed, cleared of leaves and branches, and then pounded in a mortar for grinding. The water is boiled, fruit raw materials are added to it and everything is cooked over medium heat for 5-8 minutes, then filtered and cooled. You can add sugar or honey to the compote to taste. Jelly is also made using this drink.

When preserving compote, boil it not for 5, but for 15 minutes and before removing from heat, add citric acid in a volume of 2 grams per liter of liquid.

Rose hip syrup

The simplest and most accessible recipe for making rosehip syrup involves taking the same amount of sugar and 700 milliliters of water per 400 grams of berries. Washed and peeled rose hips are poured with 500 grams of boiling water and infused for 10-15 minutes. Then the fruits that have managed to soften are crushed with a masher, after which they need to be left for another 10-15 minutes.

The remaining 200 grams of water are boiled with sugar to prepare sugar syrup. The rose hips are strained using a sieve or through double-folded gauze, and the resulting liquid is poured into sugar syrup. Everything is mixed and boiled for 2-3 minutes. Alcohol tincture of rose hips

You can prepare a tincture from fresh rose hips, which has many beneficial properties and also has a good taste and aroma. It will fit right on the holiday table and will surely please the guests.

To prepare it, take 700 grams of fruit, half a liter of vodka or alcohol, and 300 grams of sugar. Some people add bay leaves for flavor - then the drink will be more spicy and slightly tart.

You need to place washed and sorted berries in layers in the jar. Sugar is poured on top of each layer. Next, the container is closed, shaken and put in a dark place for 10 days so that the rose hips release the juice. After the sugar has dissolved, the free space in the jar is filled with vodka or alcohol. You need to leave for 2 weeks and then strain.

If desired, the remaining rose hips can be poured with alcohol again and wait 3-4 weeks. The secondary drink will not be as sweet, but still very aromatic and rich, and also stronger.

The finished tincture must rest for at least 1 week before use. The longer it sits, the better.

Cinnamon rosehip may bloom in late spring, but it does not yet have the maximum number of beneficial properties. The greatest benefit will come from harvesting at the end of summer and the first half of autumn, until approximately October. There is a belief that it is necessary to harvest rose hips by October 1, and this day is called Arina Rosehip Day.

  • Do not think that if you did not manage to finish the collection by this date, you will not be able to make the preparation. The ripening of each plant is individual, depending on the area of growth and climatic conditions, so the first day of October is only an approximate date for the end of the harvest.
  • Although rosehip is very useful, this does not mean that it, like any plant, does not absorb environmental pollution. In order not to spoil the natural properties of the bush, it is best to choose ecological collection sites where there are no operating factories or highways nearby, i.e. away from the technological sphere of human activity.
