How to clean and process honey mushrooms after harvesting?
These are one of the easiest mushrooms to clean. They do not accumulate sand and usually very little debris. This is due to the fact that mushrooms grow on stumps and not on the ground. Accordingly, there is no soil on the legs. Simply remove the film under the cap and throw away the specks. Next, you need to transfer the mushrooms to a colander and rinse with cold water. You should not soak honey mushrooms. If you want the dirt to come off faster, soak the raw materials in a salt solution for a third of an hour. This will remove sand and dirt.

Pickled honey mushrooms: recipes for the winter
Cooking features
- You can fry forest and meadow mushrooms. Forest mushrooms are larger and end up on the plate more often than meadow mushrooms, but the latter are much more tender and cook faster.
- Some inedible mushrooms, including toadstool, are disguised as honey mushrooms. You should not collect fruiting bodies that you are not sure are edible. When boiling mushrooms, put an onion in the pan - if a toadstool is found among the mushrooms, the onion will turn blue.
- You can't collect honey mushrooms everywhere. They, like other fruiting bodies, are capable of accumulating toxins that are not removed even after heat treatment. Even edible mushrooms become unsafe for health and life if they grow in disadvantaged areas, near industrial enterprises, along highways. For the same reason, experienced mushroom pickers never cook old mushrooms.
- Preparing honey mushrooms for frying is not difficult. They need to be inspected, discarding wormy and overgrown specimens, then cleaned of adhering forest debris, washed and dried. Also, before frying, wild mushrooms need to be boiled. The honey mushrooms are boiled for about 20 minutes until they settle to the bottom. Meadow mushrooms are sometimes fried without prior boiling, but still this manipulation cannot be considered unnecessary in relation to them.
- The frying time for honey mushrooms depends on the specific recipe and gastronomic preferences of the cook. Typically, mushrooms are cooked in a frying pan until they are soft and golden brown. Often, after preliminary frying, the mushrooms are topped with sour cream or other sauce, then simmered for a while under the lid.
- You can fry not only fresh, but also frozen and dried honey mushrooms. Frozen mushrooms are allowed to thaw naturally without trying to speed up the process using a microwave. The liquid formed during the thawing of the mushrooms is drained. Dried honey mushrooms are soaked to restore their shape and size. After the described preparation, both frozen and dried honey mushrooms are prepared in the same way as fresh ones.
Fried honey mushrooms are a complete snack, even if they are prepared without adding potatoes, cereals and other similar ingredients. However, it is not prohibited to supplement them with a side dish. They go well with fried and baked potatoes, buckwheat, and millet. Also, fried honey mushrooms can be supplemented with sour cream, cheese or curd sauce, sprinkled with chopped herbs.
